Andritsaina Sour Trahana is the traditional Greek favourite pasta for soups. Trahanas is made by setting out the dough in pattie shapes to dry in hot weather and then rubbing the dough by hand into small pieces and then leaving to dry again for several days until it becomes hard. It has high nutritional value, while it is very low in calories and fat content.
