Santo Santorini PDO Assyrtiko
Santo Wines, Santorini, Aegean Islands
Founded in 1947, Santo Wines is the modern incarnation of the Union of Santorini Co-operatives and represents the island’s entire community of growers, numbering over 1,200 active members.
As the principal guardian of Santorini’s vineyards, the co-operative plays a central role in preserving traditional cultivation and safeguarding the island’s Protected Designation of Origin wines. Its work is inseparable from Santorini’s unique viticultural landscape: own-rooted vines trained in kouloura baskets, extremely low yields, and varieties shaped by wind, drought, and volcanic soils. Santo Wines produces a broad range of PDO Santorini wines, from benchmark Assyrtiko to Nykteri, Vinsanto, and Mavrotragano, combining deep local knowledge with the scale and continuity needed to support the island’s growers.
Alongside wine, the co-operative also supports other recognised Santorini agricultural products, such as PDO Santorini Tomato, PDO Santorini Fava, capers and caper leaves, but its core identity remains rooted in the vineyards and the long-term stewardship of one of Greece’s most distinctive wine regions.
