Santo Vinsanto PDO Assyrtiko-Aidani

The natural high acidity of Assyrtiko and the aromatic nuances of Aidani make them perfect candidates for Vinsanto. The ripe grapes are sun dried for about a week, fermented in stainless steel then aged for three years in small oak barrels. The result is a dark ochre wine with aromas of maple, nutmeg, dried mango, and toasted pecans. The flavours are really complex, dried fruit, candied salted nuts and peel, maple syrup, pain perdu. the background acidity dances on the palate. Being relatively low in alcohol,11.5%, this is a really pretty example of Vinsanto. One of the world's great sweet wines!

Santo Wines invests in ongoing development and research, particularly looking at the preservation of biodiversity on the island through a nursery of indigenous varieties, which provides a solid base for study and the trial cultivation of local grapes. But the co-operative has a mission far beyond just viniculture, and it looks to promote all high-quality Santorini products, such as PDO Santorini Tomato, PDO Santorini Fava, capers and caper leaves.
