Kolympari is based near the picturesque seaside town of Kolymvari, in the northwest of Crete. It is a family-run business, founded in 1980, which solely produces extra-virgin olive oil of Protected Designation of Origin (PDO) and Protected Geographical Indication (PGI). Kolympari olive oil is produced from the koroneiki olive variety which has been harvested for centuries from olive groves in the Kolymvari region. The company has managed to produce a timeless olive oil that still maintains all its constituents: a golden-green hue, fruity aroma, and the flavours of the freshly harvested fruit. The olive oil extraction takes place in a modern processing plant, using only the healthiest olives shortly after harvest, under strictly controlled conditions, in low temperature with the minimum required time for mixing.
