Liapis Winery, Rapsani, Thessaly
Konstantinos is the third generation of his winemaking family, who first planted their vineyards in 1935 around the village of Rapsani. Mrs Fanio Liapi was well known in the surrounding villages until the 1960s for her red wine, which was transported by mule in goatskins! Although based in modern winemaking facilities, Konstantinos still cultivates the same vineyards, which are certified organic, and located between 400 to 600 metres altitude on schist with a granitic and limestone based sub-soil. Half of the vineyards are 70 years old ungrafted vines, while the other half range from 15 to 35-years-old. The blend of his PDO Rapsani is 50% Xinomavro, 35% Krassato, and 15% Stavroto. Konstantinos’s winemaking is low intervention, using spontaneous fermentation and co-vinification of the three varieties.
