Oeno Π was founded by Paris Sigalas in the original Sigalas family canava, set right by the sea in Baxedes, near Oia, in the area of the Kolumbo volcano. After stepping away from Domaine Sigalas in 2022, he returned to this historic winery to work at a deliberately small scale, producing up to 20,000 bottles per year of very high-quality wines.
Paris has chosen to exclusively use amphora in his winemaking, and single-vineyards of own-rooted, traditionally trained vines are vinified in separate amphora. This allows the character of each Santorini terroir to be expressed and blended in perfect balance and finesse into the 'Tria Ampelia' Assyrtiko, while also releasing singular amphora under their own label.
A pioneer of modern Santorini winemaking, Sigalas continues to push the boundary of what is possible by producing landmark Santorini wines.
