Grey Mullet Bottarga 240g
Bottarga, (Gr ‘Avgotaraho’), is salted mullet roe; a delicacy the world over. This extra special version is produced exclusively from grey mullet, recongnised as the ultimate fish for this luxurious, Omega-rich specialty. The Trikalinos family has been perfecting the art of bottarga making for over 160 years and theirs is loved by top chefs and food-lovers internationally. What is particularly special about Trikalinos bottarga is the balance in the salting and drying processes that results in a higher moisture and lower salt content in the final product. This preserves and highlights very delicate and complex flavours and aromas, along with a soft texture. Each bottarga stick is coated in bee's wax, which naturally preserves the product and seals in the intoxicating palette of sea breeze, peat and iodine from the cliffs of Messalogi in Western Greece where it is harvested.

Trikalinos, Etoliko, Central Greece
In 1856, the Trikalinos brothers, Zafeiris, Nikos and Giorgos, started producing Grey Mullet Avgotaraho (bottarga) near the Etoliko Lagoon, in western Greece. Three generations later, the same family continues to run the company, and still sources the highest quality grey mullet roe, sardines, anchovies and sea salt. Their unique method of preserving bottarga in beeswax retains much of the delicate and complex flavours of the roe and is considered one of the very best in the world.
