Vinification: Classic white vinification. Destemming, gentle pneumatic press. Fermentation temperature at 16-20 degrees C. Conservation in stainless steel tanks for 6 months. Stabilization, filtering and bottling. Soil is sand and clay.

Volacus wine was founded in 2010 by Michalis Kontizas, a young and ambitious cultivator and winemaker, and his wife Irene. They planted new vineyards of indigenous Greek varieties, producing their firs vintage in 2016. Volacus wine focuses on reviving the wine traditions of Tinos: producing high-quality wines, while respecting nature and following organic techniques. The vineyards are located in Gardari near the village of Falatados, an area chosen for its long tradition in viticulture and wine production. The vineyards are formed in terraces in an area filled with round granite rocks, known as volakes, at an altitude of 400-440 metres, in clay soil. Volacus' ethos is to maintain a low acreage yield and only practice organic farming. The vines have been planted so that they are close to the ground, benefit from the sun, but are sheltered from the strong meltemi wind and diseases.
