Tsantali Rapsani PDO Xinomavro-Krassato-Stavroto

Varietal Composition: 33.3% Xinomavro, 33.3% Krassato & 33.3% Stavroto
Region: PDO Rapsani, Halkidiki , Macedonia, Northern Greece
Vinification: Handpicked at the end of September. All the grapes –at their best average ripeness level- are co-vinificated. Fermentation at 28-30o C for a period of 8 to 10 days. Malolactic fermentation. Wine matures for 6 months in French oak barrels 300 Lt (30% new – 70% 2nd and 3rd fill) Ageing: At least 6 months in the bottle before release. Soil is clay loam / Schist-based sub-soil.

The Tsantali family has been cultivating vineyards, making wine, and distilling ouzo and tsipouro since 1890. Evangelos Tsantalis, a second-generation winemaker, rejuvenated some of the most exquisite vineyards in northern Greece and today, the family’s traditions are continued with production of PDO and varietal wines from indigenous grapes in some of the best terroirs of northern Greece.
