Domataki or Red Queen is the name given to the small cherry tomatoes that grow on the parched, volcanic soils of beautiful Santorini. These tiny, perfectly round fruits boast an intense aroma, flavour and velvety texture that makes the richest paste for toasted bread or to squeeze into sauces. Tomataki crops swell under the evening fogs of the famously altitudinous island, and are picked at full fruit then double-concentrated to produce this classic Greek paste that adds a burst of sunshine to any dish. Santornini tomatoes are protected, PDO, as a traditional food of Greece.
