Samothraki Xirotyri
Xirotiri is a traditional sheep's and goat's milk cheese from the rugged and hilly fishing island of Samothraki in the north Aegean. The animals feed on the rich surrounding flora and fauna on the island, which boasts more than 100 aromatic plants, and in peak dry season will occasionally drink sea water, giving this 8-month-aged traditional cheese a uniquely grassy and salty flavour and wonderful health benefits. It is rich in Magnesium, Vitamins A and E and natural probiotics. Cheesmaker Panagiotis Papanikolaou originally studied economics, before returning to the island in 2000 to revitalise his grandfather's dairy.

Papanikolaou, Samothraki, Aegean Islands
Panagiotis Papanikolaou's grandfather started a dairy factory in 1953 in the village of Makrilies, on Samothraki, but unfortunately had to shut down production as he got older and was unable to work. Many years later, Panagiotis, after studying economics in Thessaloniki, decided to return to the island and restart the family business. The cheese that Papanikolaou produces is made using only sheep and goats' milk from the island, where the animals graze on diverse flora and drink seawater, which gives their milk and meat a unique taste. Panagitois and his father produce a variety of soft and hard cheeses that are based on traditional Greek recipes, to which they have given their own interpretation.
