The Rizes delicatessen brand is highly respected in Greece. This Sweet Red Pepper Pâté is handmade from sweet chargrilled red peppers with paprika and a pinch of hot green pepper for a perfectly spicy mix.The peppers are chargrilled, peeled and deseeded by hand then ground and simmered for hours to make this wonderfully versatile thick mixture that smells divine. Use it to marinade meats, to add richness to soups, stir it into pasta or use it as a relish alternative in burgers and sandwiches. The pâté is prepared during September and October when the peppers are ripest. This recipe has been handed down from families in Florina and Pella, where Greece meets North Macedonia and eastern Albania.
