Step 1

Wash the courgettes and pat dry.

Step 2

Grate them on the coarsest side of your grater, add the salt and mix thoroughly. Leave the grated courgettes on a strainer for 20 min for the juices to come out.

Step 3

When ready, squeeze them to remove their juice (you should end up with 1 kg of courgettes after this process.)

Step 4

Add the rest of the ingredients to it and check the seasoning.

Step 5

Heat the oil in a frying pan until sizzling hot. Add spoon-fulls of the mixture to the oil and fry them until crunchy and golden on the outside.

Step 6

When ready, transfer them onto a tray lined with kitchen towel using a slotted spoon. Serve them with yoghurt on the side.

Yeni's Mücver (Courgette & Feta Fritters)

This is a version of the dish we've been serving ever since opening and exactly how my mom still cooks it in Istanbul.

Unlike the common mücver this one has lots of fresh garlic for a more pungent flavour and therefore shares similarities with öcce fritters of Antep (a province in Southeastern Turkey).

  • Ingredients
  • 2kg cougettes
  • 20g salt
  • 50g dill, chopped
  • 250g spring onions, chopped
  • 3 cloves of garlic, chopped
  • 350g feta, crumbled
  • 5 eggs
  • 300g flour
  • pepper
  • cumin powder
  • 2l sunflower oil
