Xirotiri is a traditional cheese from Samothraki island, aged for 8-9 months and made from sheep's and goat's milk. The animals are fed by the rich flora of the island (more than 100 aromatic plants) and they drink sea water, hence the very spacial taste of the milk.

Panagiotis, who studied economics, returned to the island in 2000 to modernise his grandfather's dairy's facilities from 1953.
