Ossetra (also known as Oscietra, Osetra, or Asetra) caviear, from the Russian Sturgeon (Acipenser gueldenstaedtii) has a full and balanced flavour, which is both fruity and nutty. The texture is buttery and the pearls are olive green to dark brown and of the largest (royal) size from Sturgeon aged 12 years and older. 

Thesauri are the only caviar producer in Greece, starting in 1992 and based in the Gulf of Arta (Amvrakikos). As protected species, Sturgeon and caviar can only be produced in CITES-certified aquafarms and Thesauri have a model farm ensuring a sustainable and high quality caviar production. The farm all three main species: Russian Sturgeon (Acipenser gueldenstaedtii), Siberian sturgeon (Acipenser baerii) and Beluga sturgeon (Huso huso). Sturgeon is endemic to Greece and was traditionally farmed for years in Evros, north-estern Greece. The name Thesauri derives from the Greek for treasure, reflecting the rarity and value of this exceptional delicacy.
