Santorini wild capers are notorious for self-growing in bushes in the most inaccessible areas, in cliffs and along the coastline. They are the small flower buds that are collected one by one by hand by "yiayiades" - the process is their daily exercise!
They are rich in vitamins and antioxidants and have a unique spicy taste, which makes them essential for the Greek larder.
