Santorini Capers

Santorini wild capers are notoriously tantalising, sprouting up in the most difficult to reach places. You can find them everywhere from rugged bushes to steep cliff faces and even in nooks and crannies in old brick walls. As such, harvesting and tracking them down is a true labour of love for the local ‘yiayades’, but worth it for their delicious texture and natural saltiness that seems to bring out the best in meat and, especially, in fish. Capers are the closed small flower buds of the Capparis shrub. They are rich in vitamins and antioxidants and have a unique spicy taste, an essential in any Greek larder.

Serve on the top of Greek, Nicoise or dakos salad and great for spicing up dishes such as pasta with bottarga or grilled fish. Or, chop finely and add into fresh mayonnaise for a truly special treat for fries.

There is nothing better than a fresh, juicy salad and we love the Cretan version.

It has the perfect crunch that comes from the barley rusks, the creaminess that comes from the fresh curd and the saltiness from the olives and capers. Of course we love it, it's what we were brought up on. The grated graviera is not very common but it fits perfectly.
