Rock samphire (Crithmum Maritimum), also known as Sea Asparagus is a highly-sought after, naturally salty plant that grows on cliffs and rocky coasts all across Europe. It has a unique, slightly woody flavour and is highly nutritious with lots of antioxidants, Vitamin C, fibre and unsaturated fats. Growing in coastal areas, samphire is a natural bedfellow for fish and seafood dishes. But it can be used in a variety of imaginative ways to add an umami flavour and soft crunch to sauces, vegetables, salads and dips. We source our samphire from the coastal outposts of the Ionian Sea, then preserve it simply in brine and distilled water.
