Origin: Kokotos Estate vineyards in Stamata, Attiki at an altitude of 420 metres
Grape Variety: Assyrtiko
Harvest: Early September
Vinification: Grapes are handpicked and transported in small crates, put in cold storage overnight, at 6 οC. From there, they are de-stemmed, crushed and then gently pressed in our Bucher pneumatic press. Static debourbage follows and alcoholic fermentation takes place in stainless steel tanks, for approximately 15 days, at controlled temperatures of 16-18°C. Sur lie treatment for 5 months.
Ageing Potential: 2-3 years
Tasting Notes: Lively and well balanced wine with a citrus character, aromas of lemon blossom, pink grapefruit and white peach. Good structure on the palate, with a citrusy mineral character and a long aftertaste, with racy mid crispness
Food Pairing: Enjoy with grilled fish, shellfish, white meat and pasta with vegetables. Serve at 12οC.
