Mastelo dairy have cretated an innovative halloumi-like grilling cheese using only fresh, full-fat cow and goats’ milk on the island of Chios. The word ‘mastelo’ refers to the wooden bucket once used to collect the milk. Local producers and farmers work collaboratively to ensure that high quality and delicious taste is consistent throughout all Mastelo cheeses.
