Krokos Kozanis, Kozani, Macedonia
Krokos Kozanis is a co-operative in the saffron PDO region of Kozani in northern Greece. The crocus flowers are hand harvested and collected in baskets so they can be dried and sorted. The stigmas are delicately dried so they preserve their characteristic properties of colour and aroma. After drying the separation of the red stigmas, from the yellow stamens, the pollen and any impurities begins. This process, which is all done by hand, can last from 20-60 days.
