Axia, Chios, Aegean Islands
The resin of the evergreen Mastiha tree, found on the hillsides of Chios, has been used for millennia for its sweet and floral scent and anti-oxidant properties. It used to be worth its weight in gold during the Ottoman’s 300 year rule of Chios and generations of families continue to treasure and harvest the Mastic tree twice a year collecting resin crystals for use in food, medicine, and distilling. Axia has taken a new approach to the traditional Mastiha liqueur of the island, producing instead a completely dry, spirit-strength drink for use in cocktails the way gin might be. The mastiha crystals are blended with alcohol and twice distilled in copper stills resulting in a premium, extra dry, and unsweetened white spirit they call Axia.
