Semolina flour is a slightly yellow, coarse premium flour that is perfect for pasta and baking. It can be milled super fine or left coarse and this version, from the Poriazi Bakery - the oldest on Lemnos - sits somewhere in the middle. It is completely natural and contains no improvers, additives or preservatives. The Poriazi brand has been synonymous with quality baked goods since 1919 and they are renowned for their crackers, flours and rusks. You will find semolina flour in a variety of much-loved traditional Greek bakes, pasta dough to cheesy bougatsas and from halva cakes to Galaktoboureko, aka semolina pudding.
