Mahlepi
Mahlepi, also known as Mahleb or Mahlab, is a delicious aromatic spice made from the seed kernels of the Mahleb cherry and it is a mainstay of many Greek and middle eastern dishes. You could not make Tsoureki or Vasilopita breads without its unmistakable flavour, which is both floral and bitter, and it also imparts a slight chewiness to bakes. It has the texture and appearance of ground almonds and can be used a bit like nutmeg and sprinkled sparingly into pastry doughs, frangipane mixes or milk puddings. It also works well to season lamb.
