Kaseri Aged 12+ Months

This medium-hard pale yellow PDO cheese is made in the north of Greece from a mixture of 80% sheep's milk and 20% goat's milk. It is delicate, mild and sweet tasting but - slowly aged for at least 12 months - it acquires added complexity and a slight 'tang'. It is excellent as a table cheese and is often used in pies (such as a kaseri pie or pastourma), or in toasties or omelettes. It can also be used to make a fried cheese saganaki. Proikas is a third-generation producer based in the small village of Sochos, north-east of Thessaloniki. They founded their dairy in 1962 and have won many awards since, including a 3 Gold Star, Great Taste Award in 2019 for this utterly delicious cheese.

Proikas, Sohos, Macedonia

Stamatis Proikashas been producing cheese for generations, using milk from Sohos, which is renowned in Greece for its excellent quality. He took on his first flock after he returned to Sohos from Mount Athos, where he had worked as a cooper and learnt the art of cheesemaking from the monks there. Years later, his grandson Stamatis continued his grandfather’s work and founded a professional dairy in 1962. Stamatis’ daughter, Eleni, brought the third generation of the family into the business, and still runs the company today. She works alongside her daughters to continuously develop their dairy, producing both traditional and new cheeses. All cheeses are produced exclusively from selected Greek milk without additives, preservatives, or improvers.
