These pitta breads take on the traditional Cypriot oval shape and are generous and pillowy enough to fill with a mixture of protein and salad to make a complete meal. In the winter months, you might add shredded carrot or red cabbage with a generous squeeze of lemon. After 45 years in the industry, baker Evangelos Kolios set out to create the greatest pittas in the world. These, his trademark Kolios pittas, are now world famous.
