Grandmother's Pastry (Horiatiko filo) 800g

Grandmother's filo pastry (filo tis giagias) or village filo (hortiatiko filo) is the more traditional, rustic version of Greek filo pastry and produces a thicker crust that's perfect for savoury dishes such as spinach pies (spanakopita) or cheese pies (tiropita). The dough is made from mixing flour, salt, water, and a small amount of olive oil and should be worked with as soon as it reaches room temperature.
