Gaia Vinegar of Santorini, Aged 5 Years

Gaia Assyrtiko Vinegar from picture perfect Santorini is aged for five years and brings together a traditional recipe from Orleans in northern France along with the classic Aceto Balsamico methods from northern Italy. Juice, skins and seeds from Assyrtiko grapes are separated into two equal parts. The first becomes a rich dry wine which is oxidised in oak casks, then left to age for four years. The second is simmered over a low flame in huge copper cauldrons and reduced until it is thick and aromatic. Eventually the two parts are blended to make this seductively sticky sweet vinegar which is given one more year to mature before bottling.

There is nothing better than a fresh, juicy salad and we love the Cretan version.

It has the perfect crunch that comes from the barley rusks, the creaminess that comes from the fresh curd and the saltiness from the olives and capers. Of course we love it, it's what we were brought up on. The grated graviera is not very common but it fits perfectly.

Yannis Paraskevopoulos and Leon Karatsalos established Gaia winery in 1994 with the goal of offering wine enthusiasts worldwide the very best of Greek wine. They invested in wineries in Santorini and Nemea, some of the most important vineyard regions in Greece. The winery in Santorini lies near the beach in a beautiful industrial building from the eighteenth century, where cherry tomatoes were once turned to tomato puree. The building has been repurposed to make delicious wine, a true testament to both tradition and modern technology. The winery in Nemea sits in the heart of the vineyard in Koutsi, at approximately 550 metres above sea level, on top of a mountain, with a beautiful view over the great plains of Nemea and the valley of the Asopos river. Not content with producing top Greek wines, Yannis is also a partner in the Santorini Brewing Company, the only brewery on the island, and makes a fantastic aged vinegar from Santorini wine.
