High altitude vineyards produce razor sharp focused, mineral assyrtiko in a richer style than Santorini. Mid-yellow, citrus scented, lovely mellow aromas with citrus peel and nice lemony acidity. There is richness and velvety texture in abundance with an extra level of richness that will go really well with spicy food and Japanese sushi.

Vinification: Classic white vinification with fermentation in stainless steel tanks, at a low temperature (18°C). It was aged for 1 year in bottle.
Analytical Data: Alcohol 13.8% vol.
Tasting Characteristics: White-yellow color and soft citrus aromas. It has a mineral taste which is the characteristic feature of the variety. Its high acidity balances with its full body.
Room temperature about 10°C.
Ideally paired with fish.

About our producer:
The tradition and history of Douloufakis Family in vineyard cultivation and production started in 1930 when the grandfather Dimitris Douloufakis first established the professional wine production in old traditional premises.
Nowadays the vineyard cultivation and wine-production tradition of the Family is continued by the grandson Nikolas Douloufakis.
Having studied Oenology in Italy (Alba Intituto Agrario-Spezialitato in Diviticultura e Enologia) he has proceeded to the renewing of the wine premises and to the production of superior quality wines from his own vineyards.

Douloufakis Winery vineyards are situated in hill slopes at an altitude of 350 meters and the cultivation is done by mechanical means. They cover 10 hectares and are located within the vine region of Dafnes, in Greece. The vine varieties planted are: Vilana, Vidiano, Muscat White (of Spina), Malvasia, Mandilari, Chardonnay, Sauvignon Blanc, Liatiko, Kotsifali, Cabernet Sauvignon, Sangiovese and Syrah. Apart from  privately owned vineyards, grapes are sourced from farmers who cultivate their own vineyards in the same area.

Today the business is continued by Dimitris’ grandson Nikos Douloufakis who, having studied oenology at Alba in Italy, has renewed the production of superior quality wines from his own vineyards. The Douloufakis Winery vineyards are situated on hilly slopes at an altitude of 350 metres. They cover 10 hectares and are located within the region of Dafnes. Douloufakis are famous for the production of the single vineyard ‘Aspros Lagos’ Vidiano, as well as the PDO Liatiko red.
