Cow's Mastelo 350-400g
Mastelo is a cow’s milk cheese similar to halloumi that is perfect alone with a drizzle of olive oil, or for grilling. It is made on the large, mountainous island of Chios, in the north Aegean. It has a wonderful texture and flavour once heated - perfect for all kinds of wraps and salads. White with a milky aroma, it is soft, elastic and mildly salty and can be used in any recipe that requires mozzarella as a richer, saltier substitute. Mastelo is the Greek word for the wooden bucket that is traditionally used to collect freshly squeezed milk.
