Santo Santorini PDO Single Vineyard 'Kontarades' Assyrtiko

The grapes are sourced from a single vineyard of ungrafted 70-year-old Assyrtiko vines in Megalochori, Santorini. With only 4 acres this is a very small production, which is vinified in stainless steel and aged on its fine lees for 12 months in clay amphora. The wine has real self-confidence. The first impression is intense aromas of white peach and salty limes. This is followed by a velvet palate of rich, saline, white stone fruit in an iron glove of acid grip and complex secondary flavour from the amphora ageing. A stunning wine that showcases the unique concentration and intensity that old Santorini vineyards can produce.

Vinification: Classic white vinification. Destemming, skin contact for 6 hours in low temperature 5- 6οC. Gentle pneumatic press. Fermentation temperature at 16-17οC. Ageing in clay amphorae, on fine lees, for minimum 12 months before bottling.

The Union of Santorini Co-operatives, now known as Santo Wines, was founded in 1947. Today, it represents all cultivators on the island of Santorini, and has over 1,200 active members. Santo Wines is committed to safeguarding local, traditional cultivation, and producing the highest quality Protected Designation of Origin (PDO) Santorini wines, crops, and produce, as well as promoting sustainable agricultural development. Santo Wines invests in ongoing development and research, particularly looking at the preservation of biodiversity on the island through a nursery of indigenous varieties, which provides a solid base for study and the trial cultivation of local grapes. But the co-operative has a mission far beyond just viniculture, and it looks to promote all high-quality Santorini products, such as PDO Santorini Tomato, PDO Santorini Fava, capers and caper leaves.
