Vinification techniques: Destemming and light-crushing is followed by skin contact at low temperature (10 C) for 6hours. Long-time pressing and controlled fermentation of the juice at 16 C in inox tanks. A three months period staying on lees gives certain roundness to this wine.
Analytical Data: Alcohol: 12% vol., Total acidity: 5.47g/l., Residual sugar: 1.3g/l., pH: 3.15
Tasting characteristics: Bright lemon colour with green highlights. Aromas of spring flowers, nighflower are combined with those of fresh fruits and herbs in the nose.
In the palate, fruity, full body balance with the peppery acidity.
Fresh, long and lemony aftertaste.
Serving tips: Serving at 9-11 C. You can enjoy it as an aperitif, with light hous d’oeuvre and yellow cheeses.

Mylonas Winery owns 12 hectares located from 80m to 200m above the sea level.
The soils are mainly limestone and schist with some gravel sites too. Sourrounded by the sea, Attica’s winters and cool summers provide ideal conditions for viticulture.
