Vasilis Kourouniotis is based in the village of Elliniko, in the centre of the Peloponnese, giving his traditional, small-scale dairy access to fresh sheep and goat's milk from the surrounding mountains of Arcadia, from which they produce their traditional feta, graviera and myzithra.
Mizithra is a traditional Greek whey cheese, similar to an aged ricotta.
