Kostarelos soft feta is entirely handmade (cutting the curd, placing in moulds etc.), with home-made rennet and aged in beech barrels. Soft feta is much harder to produce and little known outside of Greece. It is milder, creamier and much softer in texture than the usual, hard, feta but absolutely delicious. It can be used in all the same ways - in salads, in cooking or as a side dish with olive oil and oregano.
