Salepi, salep, sahlep and sahlab, is the ground route of an orchid, which is rich in a polysaccharide called glucomannan, which has a thick, gloupy texture. Salepi is used to make a hot drink with milk, sugar, cinammon and ginger and also in kaimaki or dondurma ice cream, where it lends a unique elastic texture.
