Mastiha is the resin of the Mastic tree from the island of Chios and is often called Mastic Tears, due to the teardrop shape of the resin. Mastiha was probably the first chewing gum and is the route of the word masticate. It is commonly used in making tsoureki and many other breads, biscuits and pastry, as well as in ice cream. To use it should be pounded in a mortal and pestle, with a little salt for a savoury dish or sugar for a sweet one. 

It is also distilled to make mastiha-flavoured liqueurs and spirits.
