These braided biscuits were traditionally made by the Greeks of Smyrna, an ancient city on the Aegean coast of Anatolia now known as Izmir. They can be made long like miniature bread twists or - more unusually - are baked into an eye shape. Smyrna cooks were famous for their love of baking with copper pans and utensils and much of the population was made up of weavers, hence these delicious woven cookies.
