Vinification: Spontaneous fermentation in open top fermenters at ambient temperatures. Very gentle press and ageing in stainless steel for 12 months. No additions except sulphur, no fining or filtering.

Akritos Oinos, Lesvos, Aegean Islands
Akritos Oinos is a new, small winery based on the island of Lesvos, put together by a team of young local winemakers and vine growers. Their aim was to make wine 'the old way', what is now called low-intervention, using open top-fermenters and with no additions, apart from a small amount of sulphur before bottling. Based in-between the villages of Vatousa and Hidira, the team renovated an old building by the village square preserving the original characteristics and natural water well flowing from the building’s foundations. The focus has been the ancient variety of Hidiriotiko, cultivated at an altitude of some 220m to 245m above sea level. The distance from the sea and the altitude, create a microenvironment predominantly Mediterranean but with continental characteristics. Lesvos is partly volcanic and the vineyard is located in the caldera, giving the wine its complexity and minerality. Their first vintage was in 2020.
